Refreshing summer cold soup "Frutti di mare"
Ingredients
  • cream 100 g
  • avocado 2 pcs.
  • lemon juice 1/2 pc.
  • vegetable broth 350-400 g
  • crab claws 3-4 pcs.
  • medium shrimps 6-8 pcs.
  • salt to taste
  • pepper to taste
  • green onions or any other greens (of your choice) for decoration - to taste

STEP-BY-STEP COOKING RECIPE

Step 1
First, let's deal with the crabs and prepare them: remove the meat from the claws.
Step 2
Boil and peel the shrimps (leaving only the tails unpeeled for beauty).
Step 3
Now wash our avocados, extract the pulp from it, put them in a blender, sprinkle with lemon juice and beat, slowly pouring in the cooked and cooled vegetable broth until the consistency of a pleasant desired thickness. Salt, pepper. This is the base of our refreshing summer soup.
Step 4
Wash and cut separately green onions or greens (any to your taste) - it will go for decoration.
Step 5
Pour the prepared base into the tureen. Before pouring, add the cream there, previously slightly whipped with a fork.
