Sandwiches with lightly salted mackerel and egg tarragon spread

These sandwiches will be a great snack while watching football matches with friends. If the fish is salted in advance, then such sandwiches can be prepared quite quickly.

Ingredients
  • for salting fish
  • mackerel 3 pcs.
  • salt 5 tbsp
  • onion 1 pc.
  • water 1 liter
  • bay leaf 4 pcs.
  • black peppercorns 7 pcs.
  • allspice peas 7 pcs.
  • for sandwiches:
  • rye baguette 1 pc.
  • boiled chicken egg 2-3 pcs.
  • sprigs of tarragon 4-5 pcs.
  • salt to taste
  • black pepper mill to taste
  • mayonnaise with quail egg "Maheev" 1.5-2 tbsp.
  • cucumber 0.5 pcs.
  • green onions to taste
  • dill to taste

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare the fish: remove the head, tail, entrails.
Step 2
Add both types of peppers to boiling water, bay leaf, onion cut into 4 parts, salt (5 tablespoons without a slide!). Cook the brine over low heat for 10 minutes. Let it cool.
Step 3
Cut the fish into slices 2 fingers thick. We put it in a container.
Step 4
Fill with cooled brine and leave at room temperature for 1.5 hours.
Step 5
The fish should be in the brine no more than 2 hours, otherwise it will be too salty. For storage, remove the fish from the brine, store it for up to 3 days in the refrigerator.
Step 6
Punch with a blender.
Step 7
Cut the baguette into slices.
Step 8
Spread with egg - tarragon spread.
Step 9
Peel the fish of bones and skin, put the pieces of fish on sandwiches. This number of sandwiches takes about a third of the salted fish.
Step 10
Place thin slices of fresh cucumber on the sandwiches. Sprinkle with chopped green onions and dill. Sprinkle with freshly ground black pepper. Enjoy your meal!
