Sliced veal with fried onions

What does the mysterious word razbrat mean? The familiar chopped burgers from the distorted German rostbraten. The translation option is roast beef, but not classic. In its original form, quickly fried meat, then baked in the oven and served with a gravy (sauce) of fried onions, flour and vinegar. We offer our own version of the scrapping, when only pickled cucumber is added to the minced veal and bacon. And, of course, the meat is served with a generous portion of fried onions.

Ingredients
  • 1 kg veal flesh, preferably a ham or shoulder
  • 100-120 g bacon
  • 1-2 medium crunchy pickles
  • 3 onions
  • vegetable oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Pass the meat and bacon through a meat grinder using a large wire rack. Cut the cucumbers in half, remove the seeds with a sharp spoon and cut as small as possible. Throw on a sieve, let the juice drain. Combine the cucumbers with the meat. Pepper.
Step 2
Divide the minced meat into 11-12 pieces, each weighing about 100 g. With wet hands, form an oval thin cutlet up to 7 mm thick. First, fry the scraps in heated vegetable oil over high heat for 1-2 minutes. from each side. Reduce heat, cover skillet and cook until cooked through.
