Green peas, beans and feta salad
This salad, if desired, can also become lean - you just need to replace the cheese with tofu bean curd, best of all soft, the so-called "silk".
Ingredients
- 300 g green peas
- 350 g green beans
- 8 stalks of green onions
- 5-6 sprigs of mint
- 150 g feta cheese
- 5 tbsp. l. olive oil
- zest and juice of 1 lemon
- salt, freshly ground black pepper
- baguette for serving
STEP-BY-STEP COOKING RECIPE
Step 1
Boil the peas and beans in plenty of boiling salted water, 5 minutes, drain and rinse the vegetables under running cold water to stop cooking. Dry.
Step 2
Finely chop the green onion, cut off the leaves from the mint and chop too.
Step 3
For dressing, combine lemon juice, zest and olive oil. Whisk until emulsified and season with salt and pepper.
Step 4
In a large salad bowl, stir together the beans, peas, onions, and mint. Drizzle with dressing. Sprinkle with crumbled feta. Serve with a baguette.
