Smoked beets, walnuts, mascarpone and tarragon
Ingredients
- 250-300 g boiled or baked beets
- 100 g walnuts
- 150 g of mascarpone
- 25 g butter
- juice of half a lemon
- 8 Art. l. balsamic vinegar
- 4 tbsp. l. olive oil
- leaves of 2-3 sprigs of tarragon
- 0.5 tsp. salt and black pepper
- 1 st. l. brown sugar
- 1 tbsp. l. long grain rice
- 0.5 tbsp. l. tea leaves, better lapsang sushong
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the beets in half or into quarters. Mix it with lemon juice and leave for 15-20 minutes
Step 2
Combine sugar, rice and tea leaves. Pour the mixture into the center of a large sheet of foil. Flatten
Step 3
Melt the butter at the same time in a separate skillet. Add the nuts and, shaking the pan, fry them until golden brown, 3-4 minutes. Season with salt and pepper. The nuts should be completely covered with the oil mixture.
Step 4
In a small saucepan, bring the vinegar to a boil. Evaporate it 2/3. Add olive oil. Stir. 6. Place a large mascarpone dumpling on each plate. Add beets, tarragon leaves, nuts. Season with salt and pepper. Drizzle with balsamic dressing and serve.
