Stuffed Peppers with Rice and Pine Nuts

Stuffed peppers can be cooked without meat. Rice, pine nuts and olives give the vegetarian option an unusual flavor.

Stuffed Peppers with Rice and Pine Nuts
Ingredients
  • 4 large green bell peppers
  • 50 g pine nuts
  • 200 g long grain rice
  • 50 g olives
  • 15 g parsley
  • 1/2 tsp dried chili
  • 4 cherry tomatoes
  • 600 ml vegetable broth

STEP-BY-STEP COOKING RECIPE

Step 1
Cut off the tops from the peppers and remove the seeds. Boil the rice in 400 ml of boiling salted water, 20-25 minutes. Roast the pine nuts in a dry skillet and set aside.
Step 2
For the filling, mix together chopped olives, rice, pine nuts, parsley and chili. Season with salt and pepper.
Step 3
Stuff the peppers with the filling, one cherry tomato on top.
Step 4
Place the peppers in a deep frying pan, pour in the broth, cover and cook over medium heat for 25-30 minutes. Remove from heat. Serve garnished with lemon wedges.
