Stewed zucchini with fish cakes
Ingredients
- zucchini 1/2 pc.
- large tomato 1 pc.
- pepper mix KOTANYI-to taste
- salt to taste
- onion 1 pc.
- vegetable oil 4-5 tbsp
- egg 2 pcs.
- green onion 1/3 bunch (a)
- minced fish 250 g
- breadcrumbs
STEP-BY-STEP COOKING RECIPE
Step 1
Prepare ingredients.
Step 2
Peel and seed zucchini and cut into cubes.
Step 3
Peel the onions and cut them into small cubes. Cut the tomato into cubes.
Step 4
Heat vegetable oil in a frying pan, put onion, cook for a couple of minutes, then add zucchini and simmer over low heat for 10 minutes. Add chopped tomatoes and simmer until vegetables are fully cooked. Add salt and pepper to taste.
Step 5
5 minutes before being ready, beat 2 eggs, pour over the stewed vegetables, close the lid and cook until the eggs set.
Step 6
Salt and pepper minced fish, form cutlets, roll in breadcrumbs. Fry the cutlets in vegetable oil until golden brown on both sides.
Step 7
Put the stewed vegetables, cutlets on portioned plates, sprinkle with chopped green onions. Enjoy your meal!
