Peppers stuffed with carrots
Sweet bell pepper is saturated with vitamins, carotene, microelements. This bright summer vegetable keeps the body from aging and protects it from many diseases. Bell peppers are useful both raw and cooked. Pepper stuffed with carrots is a very healthy, tasty and light dish, which is especially important in summer.
Ingredients
- bulgarian pepper 10 pcs.
- carrots 1 kg
- onion 2 pcs.
- parsley 1 bunch (s)
- spice
- salt 2 tsp
- sugar 1 tbsp
- vegetable oil
STEP-BY-STEP COOKING RECIPE
Step 1
We will prepare the products we need: peppers, onions, carrots, parsley, spices.
Step 2
Divide the peppers in half. Let's remove seeds and partitions from them.
Step 3
Put peeled peppers in a saucepan with boiling water. Blanching takes no more than 3 minutes.
Step 4
Drain the hot water and let the peppers cool.
Step 5
Finely chop the onion.
Step 6
Grate carrots on a coarse grater.
Step 7
Fry the onions in a preheated pan in vegetable oil.
Step 8
Add carrots to the onion. Fry for three minutes.
Step 9
Add finely chopped parsley.
Step 10
Add salt, sugar and a mixture of French herbs to the fried vegetables. After 2-3 minutes, remove from the stove.
Step 11
Fill the halves of the peppers with stewed carrots. We put it in a saucepan for stewing, adding a little water. Simmer in a preheated oven or on the stove for 20-30 minutes.
Step 12
Put the finished peppers on a plate. Sprinkle with parsley and, if desired, grated cheese.
