Watermelon with marzipan

Delicate dessert with watermelon, marzipan and raspberry sorbet is a real summer pleasure and an excellent end to a festive meal in hot weather. If you have no desire to cook marzipan yourself, you can use ready-made, the combination with watermelon will still turn out to be delicious.

Watermelon with marzipan
Ingredients
  • watermelon - 720 g
  • almonds - 120 g
  • water - 100 g
  • sugar - 100 g
  • icing sugar - 40 g
  • basil - 20 g
  • raspberry puree - 80 g
  • raspberry sorbet - 160 g
  • mint - 4 g
  • meringue meringue - 4 g

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare marzipan: pour boiling water over the almonds, let stand for 10 minutes, peel them.
Step 2
Dry peeled almonds in a dry frying pan and grind into flour in a blender.
Step 3
Combine water with sugar, boil syrup.
Step 4
Add almond flour to the syrup, mix well and boil for 3-4 minutes.
Step 5
Pour the icing sugar onto the silicone mat, put the marzipan mass. Form a rectangle - marzipan is ready.
Step 6
Next, prepare the basil syrup: beat the basil in a blender with 20 ml of water and 20 g of sugar.
Step 7
Garnish with raspberry sorbet, meringue, fresh mint and drizzle with basil syrup.
