Young cabbage with raisins and seeds

You can add a variety of dried fruits to such a salad: dried cherries or cranberries, smoked pears and prunes, dried apricots, pineapples and dates.

Young cabbage with raisins and seeds
Ingredients
  • 1 head of young cabbage
  • 1 large orange
  • 60 g golden raisins
  • 30 g shelled unroasted sunflower seeds
  • 1 medium bunch of parsley
  • aromatic sunflower oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Pour hot water over the raisins for 15 minutes. Then drain the water, dry the raisins.
Step 2
Cut the cabbage very thinly, chop the parsley finely. Add parsley to the cabbage, lightly salt and mix with your hands.
Step 3
Rub the zest from the orange with a fine zest, squeeze the juice. Add to cabbage, stir. Cover and refrigerate for 30 minutes.
Step 4
Pour the seeds into a preheated dry frying pan, fry over low heat, stirring occasionally, for 3-4 minutes. Season salad with oil and pepper, sprinkle with seeds and serve with fried fatty fish
