Zucchini casserole with pasta is a dish that is prepared from literally nothing. Surely you have some fine pasta or soup noodles on hand. Zucchini is also not a problem, for many they grow in the country. It remains to find a piece of cheese, and bread crumbs are easy to make at home from a dried loaf. It remains to take everything and combine it into a delicious casserole, reaching for a fork with mouth-watering cheese threads.

Ingredients
  • 1 kg of young zucchini
  • 450 g of pasta of any fine paste (letters, rice, etc.)
  • 2 medium onions
  • 3 cloves of garlic
  • 100 g hard cheese
  • 50 ml dry white wine
  • 300 ml vegetable broth
  • a large handful of coarse bread crumbs
  • 25 g butter
  • olive oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Grate the cheese on a fine grater. Cut 200 g courgettes into long thin slices. Fry them over medium heat in a mixture of 2 tbsp. l. olive and butter, 2 min. from each side.
Step 2
Grate the remaining zucchini on a coarse grater. Peel and chop the onions and garlic, sauté in a large skillet in olive oil, 3 minutes. Add the grated zucchini. Increase heat and cook for 3-4 minutes, stirring occasionally.
Step 3
Reduce heat to medium. Add the pasta to the skillet. Cook, stirring, for 1 minute. Season with salt and pepper. Pour in the wine and continue cooking for another 1-2 minutes. Pour in the broth and cook for 3-4 minutes more. Remove from heat, add 3/4 grated cheese. Stir.
Step 4
Transfer the mixture from the skillet to a greased ovenproof baking dish. Top with fried zucchini slices. Bake in the oven at 180 ° C for 15 minutes.
Step 5
Combine the remaining grated cheese with breadcrumbs, sprinkle on the casserole and return to the oven for 7-10 minutes. Serve the casserole hot.
