Zucchini fritters with mushroom caviar
Ingredients
  • zucchini 350 g
  • kefir 200 ml
  • chicken eggs 2 pcs.
  • flour 160 g
  • sweet paprika 1 tsp
  • vegetable oil 2 tbsp
  • champignons 400 g
  • carrots 1 pc.
  • onion 1 pc.
  • mustard 1 tbsp
  • freshly ground black pepper 0.5 tsp
  • ground coriander 0.5 tsp
  • green onions 15 pcs.

STEP-BY-STEP COOKING RECIPE

Step 1
Let's prepare vegetables for caviar.
Step 2
Fry the onion in vegetable oil until golden brown. At the very beginning of frying, salt it - this way it will quickly give up moisture and caramelize. Then add the carrots and fry for another three minutes.
Step 3
Then we add mushrooms, they release a lot of liquid, so we simmer until the liquid evaporates. It will take about 7 minutes. Now you can add mustard, pepper, coriander - the spices must be freshly ground, so they are much more aromatic. Mix everything and remove from heat. Let cool and punch with a blender.
Step 4
It turns out 15-20 pancakes. For each pancakes we spread 1 tbsp. spoon of caviar and bandage with arrows of green onions.
