Zucchini, rucola and mint salad
Ingredients
  • 3 young zucchini
  • 70 g rocket
  • 200 g feta
  • leaves of 3-4 sprigs of mint
  • 1 tbsp. l. lemon juice
  • extra virgin olive oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
Using a paring knife, cut the courgettes into long thin strips without peeling. Drizzle with lemon juice. Stir.
Step 2
Cut the cheese into small cubes. Chop mint finely. Add cheese, arugula and mint to the courgettes. Season with olive oil. Season with salt and pepper. Serve with grilled white fish.
