All Soup with Roasted Black Lentils
Massimo Bottura's spicy lentil soup will definitely please everyone. Extremely healthy and light, easy to cook, eats quickly.
Ingredients
- 100 g green lentils
- 2 medium zucchini
- 1 bell pepper
- 6 asparagus stalks
- 2 medium carrots
- 1 head of broccoli
- 200 g parmesan crusts
- 2 tbsp. l. cilantro leaves
- 2 tbsp. l. mint leaves
- 2 tbsp. l. oregano leaves
- olive oil
- salt to taste
STEP-BY-STEP COOKING RECIPE
Step 1
In a medium-sized saucepan, pour 400 ml of water, add the parmesan crust, bring to a boil and cook for 1 hour. Strain.
Step 2
Peel the carrots and bell peppers and cut into small cubes. Also chop the zucchini and peeled asparagus. Remove the stem from broccoli, disassemble the head into inflorescences. Sauté vegetables in 2 tbsp. l. olive oil, 3 min. Cover, reduce heat to low, simmer for 30 minutes.
Step 3
Cook lentils until soft, rinse, pat dry.
Step 4
Chop the herbs, sprinkle on the vegetables, transfer to a blender and smooth into a smooth puree. Mix this puree with parmesan broth, bring to a boil, cook for 15 minutes. Salt.
Step 5
Fry lentils in olive oil until crisp, add to soup and serve.
