Apple and celery root soup with sour cream
If not for sour cream, it would have turned out to be a completely vegetarian cream soup. But it's all about her: with sour cream, the soup will turn out to be even more nutritious, with a delicate creamy taste.
Ingredients
- 1 onion
- 1 stalk of celery
- 1/2 celery root
- 2 apples
- 2 tbsp. l. olive oil
- 2 st. l. grated horseradish
- 1 liter vegetable or chicken broth
- 100 g sour cream, 15% fat
- extra virgin olive oil for serving
- 50 g of roasted fondue
- parsley
- salt
STEP-BY-STEP COOKING RECIPE
Step 1
Chop the onion and celery stalk. Peel the celery root and cut into small pieces. Peel apples from skin and seeds, cut into quarters. Crush the nuts.
Step 2
Saute the celery stalk and onions in a well-heated large saucepan in olive oil for 10 minutes, until soft. Add celery root, apples and cook for 2-3 minutes more. Pour in broth, season with salt and simmer for 30 minutes, until celery is soft.
Step 3
Remove the soup from heat and puree with a blender. Stir in half the sour cream, horseradish.
Step 4
Pour the soup into bowls. Add sour cream, some olive oil, herbs and nuts.
