Apple pie with vanilla ice cream

This open apple pie is a variation on the apple strudel theme. It is served warm with a scoop of ice cream, just like the classic apple strudel.

Ingredients
  • green apples - 600-700 g
  • sugar syrup
  • vanilla ice cream - 4 scoops
  • sugar - 110 g
  • water - 30 g
  • glucose syrup - 10 g
  • cream 35% - 130 g
  • wheat flour - 100 g
  • butter - 80 g
  • cream - 80 g

STEP-BY-STEP COOKING RECIPE

Step 1
Cooking the dough. Mix the butter at room temperature with the cremette, then add the flour and mix thoroughly. Put it in the refrigerator for half an hour.
Step 2
Divide the dough into 4 parts. From each we form a ball, roll out a circle with a diameter of 14 cm, and then often prick the dough with a fork so that it does not rise.
Step 3
Peel the apples, cut in half, core and cut into thin slices, blanch in sugar syrup.
Step 4
Cooking caramel sauce. Mix sugar, water, glucose syrup and bring to caramel color over medium heat and add hot cream. The sauce is ready.
Step 5
On the rolled dough bases, lay out the blanched apples, folded in half, in a circle.
Step 6
Pour with caramel sauce, put in the oven for 15 - 20 minutes at a temperature of 185 degrees.
Step 7
Place a scoop of ice cream on top of the warm pie before serving.
