Aranchini

Arancini (Italian arancini - "little oranges") is a dish of Sicilian cuisine. It is fried or, in some cases, baked rice balls with a diameter of 8-10 cm, usually stuffed with meat, sometimes together with mozzarella, tomato sauce and green peas. They are usually covered in breadcrumbs before cooking. They can be either round or tapered. The dish got its name due to the rich yellow-orange color after frying in oil, which gives the arancini a resemblance to small oranges.

Ingredients
  • 300 g arborio rice
  • 3 eggs
  • 50 g of grated Parmesan cheese
  • 50 g butter
  • salt, black pepper
  • vegetable oil for deep fat
  • flour
  • breadcrumbs
  • 200 g ground beef
  • 1 onion
  • 1 tbsp. l. tomato paste
  • 1 st. l. grated parmesan
  • 1 tbsp. l. chopped parsley
  • vegetable oil

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the onion and chop finely. Heat vegetable oil in a saucepan and fry the onion, 5 minutes. Add minced meat, pour in 0.75 cups of water, bring to a boil, constantly kneading the lumps with a fork. Season with salt and pepper, add tomato paste. Stir well and cook over medium heat for 20 minutes.
Step 2
Meanwhile, in a saucepan, boil 0.8 liters of salted water, add rice and cook for 18 minutes, stirring often. By the end of cooking, the rice should have absorbed all the water. Remove the pan from heat, add butter and grated Parmesan. Beat one egg and combine with rice mass, stir well.
Step 3
Sprinkle minced meat with chopped parsley, warm up, 1 min. Remove from heat and combine with grated cheese. The mixture should be thick enough.
Step 4
Moisten your hands with water, take a handful of rice a little more than a chicken egg and knead it in the palm of your hand. Put 2 tsp in the middle. meat filling and shape into a ball. Also prepare all the arancini.
