Beetroot salad with spelled
Spelled is one of the most ancient cereals. Unlike regular wheat, it is almost gluten free. Used for cooking cereals, soups and pastries.
Ingredients
- 2 bunches of small beets (about 500 g)
- 2/3 cup spelled
- 100 g assorted salad with rucola, spinach and beetroot leaves
- 1 large red onion
- 60 г Arla Apetina Soft
- 2 tbsp. l. white wine vinegar
- 2 tbsp. l. walnut oil (or olive oil)
- 2 tbsp. l. sour cream
- 1.5 tsp poppy seeds
- 2 h l. Teddy bear
- 2 cloves of garlic
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Preheat oven to 180 ° C. Wash the beets with a brush, dry. Wrap in foil and bake for about 1 hour, until tender. Cool it down.
Step 2
Peel the beets and cut them into thin slices.
Step 3
Place the spelled in a saucepan, cover with 3 cups of water and bring to a boil. Reduce heat, season with salt and cook until tender, 30 minutes. Place the spelled in a colander and cool.
Step 4
Peel the onion and cut into feathers. Crush the pickled cheese.
Step 5
For dressing, combine vinegar, peanut butter, sour cream, honey and poppy seeds. Peel and crush the garlic with salt. Add the garlic to the dressing, season with salt and pepper, mix well.
Step 6
Place the lettuce, spelled, beetroot and onion in a salad bowl, pour over the dressing and stir. Sprinkle with brined cheese and serve.
