Club sandwich with sardines
The French version of the club sandwich is sardines instead of meat and tender cream cheese. This sandwich will be a brilliant snack with cold white wine or beer at a picnic.
Ingredients
- 250 g sardines in oil
- 250 g soft cream cheese
- 75 g butter
- 1/2 lemon juice
- 1 tbsp dijon mustard
- 18 slices of sandwich bread
- 3 sprigs of rosemary for decoration (very tops)
- salt pepper
STEP-BY-STEP COOKING RECIPE
Step 1
In a large bowl, combine the cheese, butter, lemon juice, mustard, salt and pepper with a fork, add the sardines and blend into a coarse, chunky puree.
Step 2
Dry the bread in a toaster.
Step 3
Brush 12 toasts with a thick layer of sardine paste. Stack the toasts on top of each other, top with the remaining toast - you should have 6 sandwiches with 3 layers of bread.
Step 4
Cut the crust off the bread. Cover the sandwiches with plastic wrap and refrigerate overnight.
Step 5
Grill sandwiches for 20 seconds or reheat in a skillet before serving. Then, carefully slice each sandwich into 4 squares (in half, then in half again), garnish with rosemary sprigs and serve.
