Duck with apples soup
Traditionally, duck with apples is baked. This is a great holiday meal. As an alternative to baked poultry, you can make an equally delicious duck soup with mushrooms, bulgur and, of course, apples!
Ingredients
- duck (duck) 1.2 kg
- bulgur 0.5 glass (s)
- champignons 200 g
- onion 1 pc.
- carrots 1 pc.
- celery root 100 g
- potatoes 3 pcs.
- green apple 2 pcs.
- vegetable oil 2 tbsp
- sour cream for serving 150 g
- water 2.5 l
- tmin 1 h.l.
- fresh dill 0.5 bunch (a)
- green onion 0.5 bunch (a)
- salt to taste
- ground black pepper to taste
STEP-BY-STEP COOKING RECIPE
Step 1
Prepare the duck carcass for cooking, then divide into pieces, add water, bring to a boil and cook for 40 minutes, removing the fat appearing on the surface.
Step 2
Finely chop the peeled onions. Process the champignons and cut into pieces.
Step 3
Fry the onions and mushrooms in a pan with the addition of one tablespoon of vegetable oil for 5-7 minutes, until all the moisture from the mushrooms has evaporated.
Step 4
Grate peeled root celery and carrots on a coarse grater.
Step 5
Fry in a pan with the addition of one tablespoon of vegetable oil for 5 minutes.
Step 6
Remove the duck pieces from the broth. Strain the broth. Bring the strained broth to a boil, put fried vegetables and mushrooms in a saucepan, add bulgur, caraway seeds and simmer under a lid for about 5 minutes. Salt to taste. Then add the peeled and diced potatoes. Cook for about 15 minutes more.
Step 7
Peel and core the apples, cut into small pieces.
Step 8
Separate the duck fillet from the bones and cut into pieces. Put in a saucepan with apples and cook for another 5 minutes.
Step 9
Add any chopped herbs to the pan (I have green onions and fresh dill). Stir and let it brew under the lid for another 10-15 minutes.
Step 10
When serving, add a spoonful of sour cream if desired. Enjoy your meal!
