Fish in citrus marinade
Fish and Lemon - a marriage born in heaven. And if you add the aroma of lime and orange to this classic combination, then the fish in such a marinade will bloom and smell of alien aromas. No commercially available red fish beats this magnificence.
Ingredients
- 900 g fillet of salmon or any red fish on the skin
- 250 g coarse sea salt
- 380 g dark cane sugar (demirar)
- 4 star anise stars
- 1 tsp coriander
- zest of 3 oranges
- zest of 1 lime
- zest of 1 lemon
STEP-BY-STEP COOKING RECIPE
Step 1
Put everything except the fish fillet into a blender and chop until smooth.
Step 2
Line a cutting board (or an enamel tray, if you find a suitable size) with plastic wrap so that the edges hang down at the sides.
Step 3
Spread a third of the citrus marinade over the foil and place the salmon skin side down on top. Spread the remaining mixture on top.
Step 4
Wrap the fish well in plastic wrap. Place a second board and a light weight (such as a cast iron skillet or mortar) on top and refrigerate the fish for 12 hours.
Step 5
Before serving, wash the fish, dry thoroughly and cut into thin slices.
