Gozleme is a stuffed tortilla, wrapped in an envelope and rolled out. Or two cakes pinched together. This dish is native to Turkey. It is prepared from different types of dough: yeast, kefir, puff. Gözleme is often found from a special Turkish dough - yufka. The peculiarity of the dish is the dough, rolled out thinly, until transparent. Gözleme fillings range from vegetable fillings (spinach, eggplant) to meat and cheese fillings. There are sweet gezlims too. These are tortillas stuffed with brown sugar
