Green rice with cilantro
Ingredients
  • 1 cup long grain rice (basmati or jasmine)
  • 50-60 g cilantro with roots
  • 3-4 stalks of green onions
  • 2-3 cloves of garlic
  • olive and butter
  • 0.3 tsp ground coriander
  • salt

STEP-BY-STEP COOKING RECIPE

Step 1
In a large saucepan, heat the olive oil and butter mixture, about 1 tablespoon each. l., add a couple of pinches of salt and coriander. Add rice, mix and heat over low heat, 1 min. Pour in 1.5 cups of boiling water, stir, bring to a boil. Cover the pot tightly with a lid and cook over medium heat for 12 minutes. Remove from heat, wrap in a blanket and leave for 15 minutes.
Step 2
While the rice is cooking, add the dressing. Rinse cilantro roots and stems thoroughly. Finely chop the cilantro, green onions and peeled garlic. Season with salt, stir and whisk with an immersion blender into a paste. Add 2-3 tbsp. l. olive oil.
Step 3
Add green pasta to hot rice, along with 2-3 tbsp. l. butter, stir well and serve immediately.
