Grilled courgettes with cheese dressing
Grilled zucchini is one of the best side dishes for kebabs. They are prepared very quickly, and in this dish you can use the entire zucchini summer harvest without any problems. And if you season the zucchini with pink pepper and cheese sauce, the side dish will turn out to be a full-fledged second dish with a haze aroma.
Ingredients
- 2 zucchini
- 2 handfuls of lettuce leaves
- 70 ml cooking oil for frying
- sea salt
- 1 tbsp pink pepper
- 5 cloves of garlic
- 4 sprigs of rosemary
- 1/2 lemon
- 50 g cheese
- a small bunch of basil (red or green)
- 2 tbsp good olive oil
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the zucchini (if it is hard), cut into "tongues" 5 mm thick. Place in a bowl, add rosemary, sprinkle with crushed pink pepper, drizzle with olive oil. Crush the garlic and add to the zucchini too. let stand 5 minutes to let the zucchini soak in the aromas and grill until golden brown. Transfer to a lidded bowl to keep warm.
Step 2
For dressing, grate the cheese on a fine grater. Squeeze the juice out of half a lemon. Chop the basil finely.
Step 3
Prepare a dressing: combine grated cheese with olive oil, lemon juice and a pinch of salt, mix everything, add chopped basil, mix again.
Step 4
Pour the dressing over the zucchini, add the lettuce and mix everything.
