Grilled dorada with lemon oil

Fish lovers know for sure that in order to cook fried fish deliciously, it is enough to observe the rule of "three Ps" - to clean, salt and acidify, the fish would be good. Therefore, we decided to show you this versatile recipe, slightly embellishing it with lemon oil. This makes the fish even tastier.

Grilled dorada with lemon oil
Ingredients
  • 2 small dorado
  • 2 lemons
  • 5-6 sprigs of parsley, cilantro, basil
  • salt, freshly ground black pepper

  • juice and zest of half a lemon

  • 1 clove of garlic
  • 1/4 cup olive oil

STEP-BY-STEP COOKING RECIPE

Step 1
Peel the gilthead, remove the gills and entrails. Make 2-3 small diagonal cuts on the sides of the fish. Rub the inside of the fish with salt and pepper. Thinly slice the lemons and stuff the belly of the gilthead, put the sprigs of herbs.
Step 2
Season the outside with salt and pepper, drizzle with olive oil. Leave it on for 15 minutes.
Step 3
Prepare lemon oil at this time. Grate the lemon zest on a fine grater, squeeze the juice. Finely chop the green leaves. Peel the garlic, finely chop and grind into a paste with a pinch of salt. Combine olive oil, garlic and lemon juice and zest, beat well, add herbs. Season with salt and pepper.
Step 4
Preheat a grill pan and brush with olive oil. Place the fish in a skillet and grill on one side for about 5-7 minutes, depending on size. Gently pry the fish with a spatula, starting at the tail, and flip it over to the other side. Cook for another 5 minutes.
Step 5
Transfer the fish to a warmed dish, sprinkle with lemon oil, cover with foil and let sit for 5 minutes. Serve gilthead with boiled young potatoes sautéed in a pan.
