Hosting pancakes

The pancakes themselves are prepared according to a traditional recipe. It's all about their filling: in Hosta pancakes, it is citrus and chocolate cream. If you decide to cook such for a children's party, exclude the cognac from the chocolate cream.

Ingredients
  • 340 ml of milk
  • 135 g flour
  • 2 eggs
  • 65 ml vegetable oil + a little more for frying
  • 12 g of sugar
  • 3 g of salt
  • ice cream
  • halva
  • fresh berries
  • nut butter
  • mint
  • zest of 1 lemon
  • 500 ml of milk
  • 95 g flour
  • 190 g of sugar
  • 5 yolks
  • 250 g cream, 30-38% fat
  • 180 g dark (from 60% cocoa) chocolate
  • 3 very fresh eggs
  • 90 g of sugar
  • 75 g cream 20-30%
  • 20 ml brandy

STEP-BY-STEP COOKING RECIPE

Step 1
For pancakes, beat eggs with salt and sugar, gradually add flour. Pour in milk and stir until smooth. Let it brew for 20 minutes. Add butter before baking. Bake thin pancakes in a greased skillet.
Step 2
For citrus cream, boil the milk. Add sugar, lemon zest and let it boil again. Cool and remove the zest. Mix the flour and yolks separately, bring the milk to a boil again. Pour hot milk into the flour mixture in a thin stream, kneading the cream with a whisk. Pour the cream through a sieve into a saucepan and place over medium heat. Constantly stirring the cream with a whisk, wait until bubbles appear and cook for 2 minutes. Pour into a bowl, cover directly with plastic wrap and cool completely. Whip the cream and stir in the cooled cream. You will get a lot of cream, but you can serve it just like that - for example, with berries. It can be stored in the refrigerator for up to 3 days.
Step 3
For the chocolate cream, beat the eggs and sugar until fluffy. Melt the chocolate with cream and cognac and stir into the egg mass. Cool completely.
