Indonesian corn pancakes
Corn pancakes are a popular Indonesian dish. Such pancakes can be tasted, for example, in Bali. To cook these pancakes, which are more like meatballs or miniature pies in shape, you need versatile ingredients - flour, shallots, garlic, chili, cilantro and, of course, corn.
Ingredients
- 4 ears of corn
- 1 garlic clove (chopped)
- 1 onion, finely chopped
- 2 shallots (chopped)
- 1 green chili (pre-seed and chop)
- 3 eggs
- 75 g flour
- 750 ml vegetable oil
- cilantro leaves for garnish
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the corn off the cob with a sharp knife. Leave in about 1 cup of corn kernels, and place the leftovers in a food processor along with the garlic, onions, shallots, chili, eggs, and flour. Mix in a blender to make a coarse paste and place in a bowl. Toss the remaining corn kernels into the mixture and season with salt and pepper
Step 2
Heat oil in a wok or deep skillet until steam forms, then dip a spoonful of mixture into burning oil and fry until golden brown and crispy.
Step 3
Remove the pancakes with a slotted spoon, dry on a paper towel and serve, garnished with cilantro.
