Potato pancakes with pike caviar
The pike caviar potato pancakes are a proven classic. Even a well-fed person will reflexively reach for the fork from one name. Because it's impossible to resist a crispy potato crust, sprinkled with eggs bursting on the tongue. Anton Kochura, the chef of the OneginDacha restaurant in Rostov prepares this dish in a slightly new way: adding a drop of Asian fish sauce to the caviar for greater expressiveness.
Ingredients
- potatoes - 500 g
- Yolk - 4 pcs.
- semolina - 60 g
- salt to taste
- sunflower oil for frying - 100 g
- dill - 5 g
- green onions - 5 g
- sour cream - 150 g
- shallots - 0, 015 g
- pike caviar - 100 g
- vegetable oil - 0.04 g
- fish sauce - 1 drop
STEP-BY-STEP COOKING RECIPE
Step 1
Grate potatoes on a coarse grater, squeeze, add yolk, salt, semolina, mix thoroughly.
Step 2
Fry the pancakes in a preheated pan until golden brown. Then bring to readiness in the oven at 180 ° for 5 minutes.
Step 3
For pike caviar: finely chop the shallots, combine with pike caviar, sunflower oil. Stir until an emulsion is formed, at the end, add fish sauce to taste.
Step 4
Put the finished pancakes in a plate, garnish with dill and green onions. Serve with sour cream and pike caviar.
