Lechon asado, more Cuban meat
Ingredients
- 1.5-2 kg pork shoulder, with or without bone fat, in one piece
- 2 large sour oranges
- 2 limes
- 1 head of garlic
- 1 large bunch of cilantro
- 1 small bunch of mint
- 2-3 sprigs of fresh oregano or 2 tsp. dry
- 1 tbsp. l. cumin seeds
- 150 ml vegetable oil
- salt, black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the garlic. Remove the stems from the mint, chop the leaves along with the cilantro and oregano, add to the blender.
Step 2
Fry the cumin in a dry skillet over medium heat, about 2 minutes, shaking. Pour into a blender. Add butter, beat until smooth.
Step 3
Rub the meat with salt and pepper on all sides. Place in a container or ziplock bag with a lock and fill with marinade. Cover and refrigerate for 4-12 hours.
