Filipino pork ribs
Ingredients
- 1.5 kg of fatty pork ribs on the bone
- 300 ml white wine vinegar
- 80 ml soy sauce
- 1 head of garlic
- 1 red chili
- 4 very fresh bay leaves
- 1 tbsp. l. a mixture of allspice, white and black peppercorns
- 1 tsp. dark brown sugar
- salt
- loose jasmine rice for serving
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the ribs between the bones. Rub salt on all sides.
Step 2
Peel the garlic and chop. Chop the chili coarsely (remove the seeds or leave if you like spicy).
Step 3
In a heavy-bottomed saucepan, combine the vinegar, soy sauce, sugar, bay leaves, garlic, peas and chili.
Step 4
Place the ribs in a saucepan. Bring to a boil over high heat, cover, reduce heat and cook until meat is tender, 1 hour. Serve hot with rice.
