Lentils with bacon, apples and vegetables

These lentils are best served with a multi-colored cherry salad with red onions and olives, seasoned with olive oil and lemon.

Lentils with bacon, apples and vegetables
Ingredients
  • 300 g red lentils
  • 200 g of bacon or brisket in one piece
  • 2 large sweet and sour apples
  • 1 red bell pepper
  • 1 large onion
  • 4 cloves of garlic
  • 2 cm fresh ginger root
  • 1 tsp curry powder
  • salt, freshly ground black pepper
  • herbs for serving (green onions, parsley, cilantro, basil), optional

STEP-BY-STEP COOKING RECIPE

Step 1
Soak lentils in cold water for 15 minutes.
Step 2
Peel apples, onions, garlic, ginger and bell peppers. Chop the onion, garlic and ginger. Cut the apples and bell peppers into 1.5–2 cm cubes. Cut the bacon into the same cubes.
Step 3
Place the bacon in a deep saucepan with a thick bottom and put on a low heat (you can add olive oil if the bacon is lean).
Step 4
When some of the fat is melted from the bacon, sprinkle with onions, garlic and ginger and stir. Fry, stirring occasionally, for about 5 minutes. Add bell peppers and apples, fry for 5 minutes.
Step 5
Place the lentils in a sieve, place in a saucepan, add curry and stir. Pour in 2 cups of boiling water. Cover and cook over low heat for 10 minutes. Try to see if the lentils are ready. If not, cook as much as necessary, adding a little water if necessary.
Step 6
Season the dish with salt and pepper. Sprinkle with chopped herbs if desired and serve.
