Onion soup with goat cheese
Typically, toast in onion soup is sprinkled with grated, hard, aged cow's cheese.
Ingredients
- 1.5-2 kg of hot yellow onions
- 200 g soft goat cheese
- 150 ml dry white wine
- 1 small baguette
- 3 sprigs of thyme
- melted butter
- 1 tsp sweet paprika
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the onion and cut into half rings. Melt the butter in a thick-walled, heat-resistant saucepan (a rooster or rooster will do just fine). Add the onion, salt and fry over high heat, stirring occasionally, for 15 minutes.
Step 2
Place the pot on the stove, pour in 1.2 liters of cold drinking water, bring to a boil, season with salt and pepper, cook for 20 minutes.
Step 3
Meanwhile, fry the baguette croutons on both sides. Brush them with cheese, place 2 in bowls. Pour over boiling soup and serve immediately.
