Paella - Spanish rice dish with white fish and vegetables
For a family trip to Spain, it is not at all necessary to spend money on vouchers, sit out queues for passports and beg for a vacation at work. It is enough just to gather everyone at the table. And put it in the center. Paella. There is nothing more Spanish than this dish. Perhaps bullfighting. But you can watch bulls on TV. But paella should be tried!
Ingredients
- cod fillet 350 g
- fish broth 200 ml
- white wine 50 ml
- pureed tomatoes 100 g
- olive oil 30 ml
- olives 30 g
- jasmine rice 150 g
- red onion 1 pc.
- lemon 0.5 pcs.
- garlic 2 tooth.
- smoked paprika 1 tsp
- turmeric 0.5 tsp.
- parsley 1-2 bunch (s)
STEP-BY-STEP COOKING RECIPE
Step 1
Defrost the broth in advance. Bring to a boil in a saucepan. Examine the fish for bones. Noticeable delete. Cut into cubes. Heat a deep skillet with 10 ml olive oil. Fry the fish over medium heat for 1 minute. from each side. Transfer to a plate.
Step 2
Cut the onion into half rings. Chop the garlic finely. Heat the same skillet with 10 ml of olive oil. Saute the onion and garlic over medium heat, stirring for 1-2 minutes. Add rice. Pour in the wine. Evaporate the wine by half. Add paprika and turmeric. Pour in broth and a glass of water. Add tomatoes. Stir. Cover with a lid. Cook, stirring for 15 minutes. until the rice is done.
Step 3
Meanwhile, grate the lemon zest. The zest is a thin colored skin, the white is already bitter. Chop the parsley. Slice the olives into rings or cut them in half. Or, if desired, leave intact. Return the fish to the cooked rice. Season with salt to taste. Stir. Add lemon zest and juice to taste. Pour in 10 ml of olive oil. Stir. Sprinkle with parsley and olives. Serve immediately.
