Pavlova with fruit and berry sauce

Although the famous Pavlova dessert can be prepared all year round, choosing fruits according to the season, it seems to us that it is especially good in summer. Airy clouds of meringue, whipped cream and juicy berries are the perfect summer dessert recipe.

Ingredients
  • For meringue:
  • 6 proteins at room temperature
  • 350 g icing sugar
  • 1 st. l. vinegar
  • For the cream:
  • 150 ml cream, 35% fat
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • For the sauce:
  • 500 g berries (raspberries, strawberries - can be frozen)
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • For filing:
  • berries (strawberries, raspberries, blackberries)

STEP-BY-STEP COOKING RECIPE

Step 1
Preheat oven to 150 ° C.
Step 2
Place the egg whites in a bowl and beat with an electric mixer on medium speed until soft peaks form.
Step 3
While whisking, add the icing sugar a little at a time. At the end, you should have a lush, glossy mass, and tough peaks should form well on the rim. Now add the vinegar and beat for another 1 minute.
Step 4
Reduce oven temperature to 110 ° C. Line a baking sheet with parchment. Using a large spoon, spread the beaten egg whites in portions at a distance from each other. Place the baking sheet in the center of the oven and bake the meringue for about 1 hour 15 minutes.
Step 5
Turn off the oven and leave the door slightly ajar to allow the meringue to cool completely. Carefully remove the cooled meringue from the paper and transfer to a dish.
Step 6
Prepare the sauce. Place the berries in a saucepan, add sugar and bring to a boil. Cook, stirring occasionally, over low heat until the sauce thickens, 20 minutes. Remove from heat, add vanilla extract and cool. Use a blender to whip through the sauce, if desired.
Step 7
For the cream, beat the vanilla cream and powdered sugar until stiff peaks. Place the whipped cream gently on top of the meringue and garnish with berries. Serve the berry sauce separately.
