Pumpkin, ricotta, spicy honey
If you will prepare this dish, cook a lot of spicy honey at once. After all, it is suitable for pancakes and waffles, toast and even for a cheese plate.
Ingredients
- 1 pumpkin weighing 0.8-1 kg
- 250 g puff yeast dough
- 250 g ricotta or other similar cheese
- 30 g of hard, aged cheese
- 1 yolk
- 4-6 sprigs of fresh thyme
- 500 g flower or meadow honey
- 250 ml lemon juice
- 300 ml orange juice
- 500 ml red wine vinegar
- 2 cloves of garlic
- 2 cm fresh ginger root
- 1 star anise
- 1 cinnamon stick
- salt, cayenne pepper, smoked paprika, cumin, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
For spiced honey, bring the lemon juice to a boil. Boil over low heat, 5 minutes. Boil the orange juice and vinegar separately.
Step 2
Combine prepared foods in one saucepan. Add honey and all other ingredients and cook over low heat, 1 minute. Remove, cool completely and leave for 12-24 hours. Strain the honey.
Step 3
Cut the pumpkin into slices. Place on a baking sheet lined with baking paper. Drizzle with spiced honey and season generously with salt. Bake at 180 ° C, 45-60 minutes. Remove from oven. Cool slightly. Cut off the pulp. You should get about 400-500 g.
Step 4
Mix in a saucepan with 20 g of honey and salt. Boil, stirring occasionally, over medium heat, 5-10 minutes. Cool slightly. Transfer to a blender bowl. Grind until smooth. Cool completely.
Step 5
Roll out the dough. Cut out circles with a diameter of 3 cm. Transfer to a baking sheet lined with baking paper. Refrigerate for 15–20 minutes.
Step 6
Brush the surface of the dough with yolk, beaten with a pinch of salt. Cover the mugs with baking paper. Put a baking sheet on top and place the structure in an oven preheated to 180 ° C. Bake for 8-10 minutes. Remove, cool completely on a wire rack.
Step 7
Place pumpkin puree and ricotta on each round of dough. Drizzle with honey, sprinkle with thyme leaves and garnish with a slice of hard cheese.
