Russian cheesecakes with sauce trio: sour cream, honey and condensed milk

Why are cheesecakes called cheesecakes if they are made from cottage cheese? Cheesecakes have been cooked in Russia for a long time. And for the 19th century, they were already an "old dish". And the word "curd" appeared in our language only in the 18th century. Until that time, the language used the word "sir", so they called both cheese and cottage cheese. Here is the answer: everything that was made from cottage cheese before the word "cottage cheese" appeared was called "cheese"; this is how the word "syrnik" appeared.

Ingredients
  • flour 80 g
  • icing sugar 40 g
  • condensed milk 50 g
  • egg 2 pcs.
  • cottage cheese 9% (packing) 1 pc.
  • vanillin (packing) 1 pc.
  • honey 35 g
  • sour cream 45 g
  • mint (leaves) 3 pcs.

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare bowls for whites and yolks. Carefully separate the whites from the yolks. Crack the egg and transfer it from one half of the shell to the other, pouring the egg white into a bowl. Set aside the yolks in another bowl. You don't need proteins.
Step 2
Add cottage cheese, powdered sugar, vanillin and 40 g flour to the yolks. Mix thoroughly until smooth curd mass. Pinch off a piece of the mass and use your hands to roll a ball the size of a ping pong ball. So repeat with all the curd mass. Sprinkle flour on a board or table. Roll the balls in flour one at a time. And flatten the balls with a flat spatula or knife, turning them into small washers 7-10 mm thick.
Step 3
Preheat a skillet with a drop of vegetable oil. Fry cheese cakes for 3-5 minutes. on each side without a lid over low heat. Flip with sharp but firm movements. If it seems to you that the cheesecakes are raw, send them preheated to 190 grams. oven for 3 minutes. Serve ready-made cheesecakes immediately with a sauce trio: condensed milk, honey and sour cream. Decorate with mint leaves.
