Smoked beef sausages
Ingredients
- pork shoulder 700
- beef brisket 1200
- cayenne pepper 5
- mustard 15 g
- coriander 15 g
- sea salt 60 g
- ground garlic 40 g
- smoked paprika 30 g
- crushed pepper 30 g
- sugar 50 g
- ground paprika 30 g
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the meat into cubes, add spices and scroll in a meat grinder, first through a large ring, then a small one.
Step 2
Put the meat in the refrigerator for a day to allow the meat to cool and thicken.
Step 3
Stuff the prepared pork casings with minced meat, greased with oil.
Step 4
The size of the sausage may vary.
Step 5
Smoke the sausages for 30 minutes.
