Smoked eggplant caviar
Eggplant caviar is undoubtedly part of our diet. It should be varied and the dishes nutritious. But in addition to our own health, we should strive to maintain the health of the planet. For example, switch to local products, not buy too much, give up semi-finished products or poached fish.
Ingredients
- eggplant - 800 g
- red bell pepper - 140 g
- onions - 50 g
- carrots - 40 g
- fresh thyme - 5 g
- garlic - 3 cloves
- vegetable oil - 120 g
- fresh rosemary - 10 g
- tomato paste - 150 g
- salt, pepper, sugar to taste
- borodino bread
STEP-BY-STEP COOKING RECIPE
Step 1
Put pepper, salt, garlic, thyme, rosemary in a mortar, add some vegetable oil and knead everything well.
Step 2
Cut the eggplant in half, make cuts. Liberally grease the eggplant at the incision with the resulting mixture, wrap in foil and bake for 15 minutes at 180 degrees. Take out the eggplants and let them cool, but do not remove the foil.
Step 3
Chop peppers, carrots and onions at random.
Step 4
Fry in vegetable oil with garlic and thyme for 5 minutes over medium heat, add randomly chopped eggplants, rosemary and fry for another 3 minutes, add tomato paste and sauté well for 3-5 minutes over medium heat. Add some water and spices and simmer for a few minutes.
