Smoked pork ears in batter
Ingredients
- pork ears 1 kg
- star anise 6 g
- water 5 l
- peppercorns 5 g
- bay leaf 3 pcs.
- dill stalk 50 g
- parsley 50 g
- soy sauce 300 ml
- salt 70 g
- cloves 3 pcs.
STEP-BY-STEP COOKING RECIPE
Step 1
For batter: Egg - 3 pieces, Flour - 300 g, Water - 300 ml, Pepper - 4 g, Smoked paprika - 5 g, Salt - 4 g
Step 2
Bring water to a boil, then add the pork ears.
Step 3
Boil ears and only then add all the spices and herbs.
Step 4
Remove the ears from the brine and cool on parchment, otherwise they will stick.
Step 5
Cook until the ears are soft, then smoke for about 1.5 - 2 hours.
Step 6
At home, any old saucepan can replace the smokehouse. Pour alder sawdust on the bottom, then put the meat on a sieve and place it in a saucepan.
Step 7
Fry the ears in batter.
