Turkey for Christmas
To make sure that there is enough festive food for all guests, we bake a turkey with delight and pleasure at Christmas.
Ingredients
- turkey 1 pc. 8 kg
- salt 400 g
- sugar 300 g
- smothering peppercorns 15 pcs.
- dried thyme 2 tbsp
- mixed rosemary 2 tbsp
- dried sage 2 tbsp
- apple 2 pcs.
- orange 2 pcs.
- mandarin 4 pcs.
- garlic beet 2 pcs.
- olive oil 4 tablespoons
- butter 100 g
STEP-BY-STEP COOKING RECIPE
Step 1
First, cook a vegetable broth with cabbage, onions and carrots. After cooling, we discard the vegetables, salt (50 g per 1 kg of poultry), sugar (40 g per 1 kg of poultry) add dried herbs and peppercorns. Bring to a boil and set to cool, then pour the broth into a large container so that everything is covered. Marinate in time - multiply the weight of the bird by two.
Step 2
We take out, stuff with halves of apples and oranges, stick sprigs of fresh rosemary into the tangerines. We stab the abdomen with a wooden skewer. put on a baking sheet on a wire rack - I use a grill grid with sides and a detachable handle. Put the rest of the fruit that does not fit into the bird on a baking sheet, pour 1.5 cm of water, grease it with olive oil on top, cover with foil and put in the most preheated oven, temperature put 180 C.
Step 3
Baking time - poultry weight in kg. multiply by 40 minutes. Periodically pour over the juice from the pallet. An hour before the end, remove the foil, pieces of butter on the breast, pour the juice every 10 minutes. Take out, cover with foil and let stand for 1 hour. Serve with berry sauce.
