Ukha with fish dumplings

To such an ear, you can bake very quick pies from ready-made puff pastry with chopped hard-boiled eggs, green onions, dill and butter. Do not forget to grease the pies with yolk before baking so that they look nice on the table.

Ingredients
  • 1 medium onion
  • 1 medium carrot
  • a quarter of a small celery root
  • melted butter
  • 1-0.8 l of fish broth
  • 4-5 sprigs of dill
  • freshly ground black pepper
  • 300-350 g salmon fillet
  • 120 ml cream, 33-38% fat
  • 1 egg
  • a pinch of freshly grated nutmeg
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
For the dumplings, remove the fillets from the skin and cut the flesh into small pieces. Place in a blender or food processor and whisk in a puree. Add cream and egg, season with salt, pepper and nutmeg, beat again. Refrigerate for 20 minutes.
Step 2
For fish soup, peel the vegetables and cut into very small (5–7 mm) cubes. Sear the vegetables in a heavy-bottomed saucepan in oil over medium heat, stirring occasionally, for 5 minutes.
Step 3
Pour the broth into a saucepan, bring to a boil over medium heat, cook for 10 minutes.
Step 4
Boil water in a wide saucepan, season with salt. Using 2 teaspoons, soaking them all the time in boiling water, form dumplings from the minced meat and lower them into a saucepan. Cook until surfacing, 3-4 minutes. Place the dumplings in the ear, cook for 30 sec. Remove from heat, sprinkle with dill and pepper.
