Veal chopped with vegetables
Telnoe is an old Russian dish. Prepared from the body of a fish, hence the name. There are solid whole and bitten. Any fish is suitable for the recipe, but pike perch or pike are the tastiest.
Ingredients
- fish fillet 500 g
- carrots 250 g
- canned green peas 100 g
- egg 1 pc.
- onion 2 pcs.
- flour 4 tbsp.
- water 1 liter
- dill
- parsley
- ground black pepper
- salt
- vegetable oil 1 tsp
- horseradish sauce
- seasonings to taste
- gauze or linen napkin
- twine
STEP-BY-STEP COOKING RECIPE
Step 1
Ingredients.

Peel the carrots, cut into small pieces. Place in a microwave container. Add 3 tbsp. water, close the lid. Cook at maximum power for 6-8 minutes. Stir in the middle of cooking. Add salt and leave for 1-2 minutes.
Step 3
Grind the carrots with a blender, add a little vegetable oil.
Step 4
Cover the baking sheet with parchment, lightly sprinkle with vegetable oil. Apply the carrot paste to the parchment. Smear gently with a flat spatula to form squares. They should not be too thin or thick. Dry in the oven in the "Convection" mode at 120 * C - 20-30 minutes.
Step 5
Cool the resulting carrot squares on a wire rack. Trim the edges with a sharp knife. Leave the remaining crumbs for decoration.
Step 6
Cut the fish fillet into small pieces, mash with a fork. If there are bones, they must be removed.
Step 7
Add finely chopped onions and herbs, 1 tbsp. flour, beaten egg, salt, pepper, seasonings to taste. Stir until smooth.
Step 8
Pour flour on a flat plate. Form small sausages out of minced meat and roll in flour. Wrap each tightly in a gauze napkin and tie it with twine on both sides.
Step 9
Place the rolls on the bottom of the pan.
Step 10
Add 1 liter of hot salted water. You can add some cucumber pickle - the dish will be even tastier. Cover the container with cling film. Cook in a microwave on medium power for 8-10 minutes. Let the rolls cool for 5 minutes, then cut in half diagonally.
Step 11
Serve on carrot squares with horseradish sauce and green peas, sprinkle with carrot crumbs.
