Baked wild boar with vegetables
Boar meat baked with vegetables according to Serge Markovich's recipe. This dish will definitely surprise your guests!
Ingredients
- boar meat (thigh) 2 kg
- rosemary (fresh) to taste
- dried paprika (spicy and sweet) to taste
- salt to taste
- garlic (cloves) 7-8 pcs.
- black pepper (mill) to taste
- thyme to taste
- juniper berries 5-7 pcs.
- potatoes 2 kg
- onion 400 g
- white wine 0.75 glass (s)
- carrots 1 pc.
- olive oil 4 tablespoons
STEP-BY-STEP COOKING RECIPE
Step 1
Peel the meat from the films.

Crush the garlic cloves

Make deep cuts with a thin knife, put a little salt, rosemary and a clove of garlic in each cut.
Step 4
Sprinkle the meat with salt, a mixture of sweet and hot paprika, mashed juniper berries
Step 5
Coarsely chop onions, carrots, potatoes
Step 6
Place vegetables in a baking dish, season with salt and pepper, add rosemary and 2 tablespoons olive oil. I cover the form with cooking paper, but this is due to the harmful nature of my oven)))

Part vegetables.

Add the meat and pour olive oil over it. Put the dish in a well-preheated oven for about 30-40 minutes, focus on your oven: we need to brown the meat.
Step 9
As soon as the meat is browned, take out the mold, sprinkle with fresh or dried thyme, pour over the wine.
Step 10
We close, or rather, wrap the form in foil so that there is not a single hole. And we return to the oven for a couple of hours, reducing the temperature. The game will be cooked soaked in wine vapor.
Step 11
After a couple of hours, open the foil, the dish is ready.
Step 12
Cut the meat into pieces. Put on a plate with vegetables, pour with sauce (meat juice). Sprinkle with herbs if desired. Enjoy your meal!
