Kalach is the most famous Russian bread. Unlike all other breads, it is prepared exclusively from wheat flour and without sourdough.

Ingredients
  • 500 g premium flour
  • 15 g fresh or 5 g quick dry yeast
  • 200 ml of milk
  • 2 eggs
  • 60 g butter
  • 40 g of sugar
  • 5 g of salt
  • vegetable oil
  • egg yolk

STEP-BY-STEP COOKING RECIPE

Step 1
Mix flour with yeast, salt and sugar. Add milk and beaten eggs to the flour mixture, then add butter. Knead an elastic, but slightly sticky dough using the Richard Bertinet method, 4-5 minutes.
Step 2
Leave it at 22-26 ° C for 2 hours. During the rise, knead the dough twice.
Step 3
Divide the dough, which has doubled, into 3 parts, roll into bundles and braid. Buns of any shape can be made from the same dough.
Step 4
Transfer the roll to a greased baking sheet, tightly join (interlace) the edges, making a ring out of the pigtail. Leave for an hour proving.
Step 5
Brush the dough with egg yolk before baking. Bake at 190 ° C for 35 minutes. Cool the finished roll on a wire rack.
