Cantonese fried rice
For a long time this Chinese city was called not Canton, but Guangzhou. But the dish has retained its former name - the one that is known all over the world. Cantonese rice can be cooked for you in any part of the world, and not only in Chinese restaurants. It is adored by all the inhabitants of Southeast Asia, the French and Americans love to cook. Ingredients
- 200 g baked pork or chicken
- 1 small carrot
- 2 sweet red peppers
- 3 cm fresh ginger root
- 2 cloves of garlic
- small bunch of green onions
- 6 quail eggs
- 360 g cooked friable rice
- 4 tablespoons unrefined peanut butter
- salt to taste
- freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the meat or poultry into long strips. Cut the carrots into very small cubes. Remove the core from the pepper, cut the pulp into small cubes. Chop the ginger, garlic and onion.
Step 2
Heat half the oil in a wok, add the white onion, ginger and garlic, cook over high heat for 30 seconds. Add carrots and peppers, 7 cook 1 minute. Add rice and meat, cook, stirring for 2-3 minutes. Transfer the rice to a bowl, wipe the wok with paper towels.
Step 3
Beat the eggs. While whisking, add the remaining green onions and some salt. Heat the remaining butter in a wok, add the egg mixture and cook over medium heat, stirring occasionally, until the eggs begin to set slightly
Step 4
Place rice in wok, stir well, stir, increase heat to high and cook, stirring occasionally, for 1-2 minutes. Season with pepper and serve immediately.
