Champignon tartare with potatoes and sour
An original recipe for tartare for those who do not eat meat and fish and love mushrooms. Champignon tartare with potatoes and sour cherry is an exceptionally festive snack option. However, if you are not sorry for the truffle paste for mousse, no one forbids cooking it on a regular day.
Ingredients
- champignons - 60 g
- truffle sauce - 30 g
- mashed potatoes - 80 g
- grana padano cheese - 6 g
- olive oil - 2 ml
- salt to taste
- porcini mushroom powder - for decoration
- sour leaves and dill umbrellas - for decoration
- homemade mayonnaise - 25 g
- truffle paste - 5 g
STEP-BY-STEP COOKING RECIPE
Step 1
For the sauce, mix mayonnaise and truffle paste.
Step 2
Cut the champignons into small cubes. Season with truffle sauce. Salt to taste, mix gently.
Step 3
Put mashed potatoes on a plate, tartar on top. Sprinkle a little with olive oil.
Step 4
Decorate the dish with slices of cheese, herbs and porcini mushroom powder.
