Chicken gherkins in orange glaze

This dish could be called "Chicken tenderness": the meat of the gherkin chicken is much softer and softer than that of a broiler. This name will acquire a second meaning if you cook gherkin for a romantic dinner.

Ingredients
  • 2 gherkins, 200-300 g each
  • salt, freshly ground black pepper
  • 2 juicy thin-peeled oranges
  • 1 tbsp. l. smooth dijon mustard
  • 1 st. l. Teddy bear
  • 4 tbsp. l. soy sauce
  • 4 tbsp. l. olive oil

STEP-BY-STEP COOKING RECIPE

Step 1
For the glaze marinade, brush the oranges, pat dry, finely grate the zest and squeeze out the juice. Combine juice, zest and all other ingredients in a ziplock bag with a lock. Mix very well.
Step 2
Dry the chicks with paper towels. Using large scissors, cut the chicks along the back, cutting along the spine, 2–3 mm away from it. Then, in the same way, cut through the spine on the other side and remove it.
Step 3
With a sharp knife, carefully cut thin, sharp ribs from the pulp and also remove. Place the chicks on a work surface, skin side up, and press firmly on the breast with your hands to make the chicks flatter.
Step 4
Season the chicken on both sides with pepper and salt and place in the marinade. Remove excess air and close the bag. Marinate from 2 hours at room temperature to 36 hours in the refrigerator, occasionally turning the bag over to marinate the chickens evenly
Step 5
Remove the chicks from the refrigerator 30-60 minutes before cooking to warm them up to room temperature. Preheat oven to 210 ° C. Shake the marinade off the chicken, place the skin side up on a parchment-lined baking sheet and drizzle with oil. Place a baking sheet in the top of the oven and bake for 15 minutes.
Step 6
Brush the chicken with the marinade, bake for another 10 minutes. Remove on warmed plates, cover with foil and let “rest” for 7-10 minutes.
Step 7
Pour the marinade into a saucepan, put on high heat, bring to a boil and evaporate by half. Serve the chickens with hot sauce.
