Feijoa salad with dried ham
This salad is a wonderful play of contrasts. The freshness of the leaves, the salty piquancy of the ham, the sweetness of the feijoa. Plus - the texture of pomegranate seeds and pine nuts, which give the whole composition a southern flavor.
Ingredients
- 100 g of mixed salad
- a few sprigs of mint
- 6 feijoa fruits
- 1 cucumber
- 50 g thinly sliced dry-cured ham
- a handful of pine nuts
- 2 tbsp. l. pomegranate seeds
- 4 tbsp. l. olive oil
- 1 tbsp. l. lemon juice
- 2 st. l. Teddy bear
- 1 tbsp. l. balsamic vinegar
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
For feijoa, cut the stems and rind and cut the berries into wedges. Cut the cucumbers into rings. Tear off the leaves from the mint and pick them coarsely.
Step 2
Mix all the ingredients for the dressing in a small jar, close it and shake.
Step 3
Place the lettuce, mint leaves, feijoa and omtiki ham on a platter. Stir.
