Green shakshuka

Shakshuka - grilled fried eggs with tomatoes in a special way. If you replace tomatoes with greens - sorrel, spinach, tops and tarragon, you get a green shakshuka.

Ingredients
  • 2 stalks of green onions
  • 1 tbsp. l. vegetable oil
  • a piece of butter
  • 200 g spinach (can be substituted for beet tops or chard)
  • 200 g sorrel
  • 2 sprigs of tarragon
  • salt, freshly ground black pepper
  • 6 eggs
  • 200 g feta cheese or any other pickled cheese

STEP-BY-STEP COOKING RECIPE

Step 1
Cut the green onions into small pieces. Coarsely crumble the cheese.
Step 2
Heat a large deep skillet over medium heat, pour vegetable oil into it, melt the butter, add onion and cook, stirring occasionally, for 2-3 minutes.
Step 3
Add spinach (Swiss chard, tops), sorrel and tarragon leaves to the pan, season with salt and pepper and keep on fire, stirring occasionally, for 3-4 minutes, until the herbs begin to wither.
Step 4
Gently spread the herbs so that there are 6 holes in the pan. Break the eggs in them, trying to keep the yolk intact.
Step 5
Cover the pan with a lid and keep on the fire for 2-5 minutes, depending on how you want to fry the eggs.
Step 6
Sprinkle the shakshuka with the cheese and serve immediately.
