Grilled wings with cranberry, chili and apple seasoning
Ingredients
- 2 kg chicken wings
- olive oil
- 6 stems of lemongrass
- salt, freshly ground black pepper
- 200 g cranberries
- 5 medium sweet and sour apples
- 1-2 red chili
- juice and zest of 2 large oranges
- 50 g of honey
- 2 tbsp. l. mustard seeds
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Cut the wings at the joints, set aside the smallest phalanx (they can be used for broth). Rub the wings with salt, pepper and olive oil, place in a container and marinate for 1-2 hours at room temperature or up to 48 hours in the refrigerator. If the wings have been marinated in the refrigerator, remove them 2 hours before cooking.
Step 2
For seasoning, peel apples and chili, cut into small cubes. Melt the honey with orange juice in a saucepan, put apples and chili, cook over high heat for 2-3 minutes.
Step 3
Add cranberries, bring to a boil, cook for 10 minutes, covered with foil (cranberries are sprinkled). Remove from heat, add mustard and zest, season with salt and pepper. Cool it down. Put in the refrigerator for 2–36 hours.
Step 4
Layer the lemongrass stems and line half the stems in a large trellis. Place the wings on top of the lemongrass, cover with the remaining lemongrass and close the wire rack.
Step 5
Grill the wings over the charcoal, turning frequently, until tender, about 20 minutes. Serve hot (remove lemongrass) with cold seasoning.
